Can I remove the "Powered by FreshStore" link in the footer of my store?

Yes, this can be done in your Theme Settings.

In your store admin area, go to the left menu and select "Design -> Theme Settings". On this page, select the "Options" tab and see the option under "Footer".

Please remember to clear your store cache after making any changes.

Keeping this link in your footer will help us grow and improve, but no hard feelings if you want to remove it!
